Called "Ocha" in Japan, the ceremony of the preparing tea for guest is not based on the tea itself but the way one makes the green tea or "matcha" for their guest ...
The steps taken by the host, the placing of the utensils, the movements, the presentation are all directed by the server thinking of the point of view of the guest.
Each movement is slowed for the guest so that they can see how much the host wants to present a perfect gift of refreshment to their guest.
It is to please the guest, to show that it is a honor to have them in the home...
The ritual has been passed down through more generations than we can imagine.

As of June of 2023, my wife and I have decided to begin a new journey along our paths in life. We have decided to choose the road less taken, and have packed what we can into the back of our van and have left Texas, traveling deep into Mexico and are now are residing in the Pueblo known as La Floresta, Ajijic, in the state of Jalisco Mexico. The cultures, history and the people of Mexico are what brought us here. We are hoping to travel around Mexico learning and sharing the beauty of this country.
